Vegetable Dum Biryani
Delicious and aromatic biryani cooked with basmati rice, spices and a wonderful array of vegetables. Enjoy a variety of flavours and textures in one bite.

Ingredients
- 500g Basmathi rice, cooked
- 150g carrots, cubed
- 100g cauliflower florets
- 150g potato, cubed
- 100g beans cut into 1 inch pieces
- 150g bell pepper of your choice
- 1 cup green peas
- 1 cup curd
- 1 packet Knorr Biriyani Mix
- 150g onions, sliced
- 150g tomatoes, sliced
- 1 teaspoon garlic
- 1-2 green chilies, sliced
- 1 inch piece rampe
- 1-2 sprigs curry leaves
- 1 tablespoon ghee
- 1 tablespoon chili powder
- 20g Astra
- Handful of mint leaves
- 100g fried onions to garnish
- 200ml water to cook
- ½ teaspoon salt
METHOD
- In a pot add Astra and ghee. Then add ginger, garlic, green chili, rampe and curry leaves. Sauté till fragrant. Next add onion, tomatoes and sauté for a few more minutes, and then add all the vegetables. Sauté for a further minute
- Add Knorr Biriyani Mix, chili powder and curd. Then add water and cook till vegetables are done. Add mint leaves and fried onions. Mix well.
- In a casserole dish or rice cooker, add a portion of cooked rice layer and on top, add the vegetable mixture. Continue till all the rice and vegetables are layered. Cover with lid and let it stand in the warm stage. Serve hot.
