Fried Ash Plantain Curry
Delicious fried ash plantain in a spicy, tangy thick coconut curry. With the added flavour of Maldive Fish, this dish is a sure winner.

Ingredients
- 5 ash plantains
- 2 packets Knorr Maldive Fish Powder Mix
- 1 tablespoon Astra
- 1 onion, sliced
- 1 clove garlic, chopped
- 1 green chili, sliced
- 1 inch piece, rampé
- 1 sprig curry leaves
- 1 teaspoon fenugreek seeds
- 1 teaspoon roasted curry powder
- 2 teaspoons turmeric
- 1 teaspoon vinegar
- 1 teaspoon raw curry powder
- 1 cup thick coconut milk
- Oil to fry
- Salt to taste
METHOD
- Cut ash plantains into cubes, mix with 1 teaspoon of turmeric and a pinch of salt. Heat oil and deep fry till golden. Strain and set aside.
- Melt Astra in a pan, add onion, garlic, green chili, rampé and curry leaves. Sauté till fragrant.
- Add the fried plantain and rest of the ingredients. Bring to boil and serve hot.

Substitute the ash plantains with fried egg plant for variation.
