Chicken, carrot and nut pilaf
A colourful and flavourful one pot meal that is perfect for the whole family. This easy to make pilaf is simply delicious with mixed nuts giving it added taste and texture.

Ingredients
- 500g cooked chicken, diced
- 225g basmati rice, soaked
- 1 Knorr Chicken Cube
- 20g Astra
- 1 onion, chopped
- 1 clove garlic, crushed
- 1 large carrot, grated
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 2 teaspoons ground coriander
- 4 cardamoms
- 1 bay leaf
- 4 1” pieces of pandan leaves
- 450ml water
- 1 cup almond and cashews
- Salt and pepper to taste
- Fresh coriander to garnish
METHOD
- Melt Astra in a pot. Add the onion, garlic and pandan leaves and sauté till fragrant. Then, add the carrots and cooked chicken and mix well.
- Add the soaked, well drained rice, mustard seeds, cumin seeds along with the Knorr Chicken Cube and water. Mix well and bring to boil. Cover with a lid and reduce flame. Cook till rice is fluffy.
- Mix in the nuts and the ground coriander. Season to taste and sprinkle some chopped coriander leaves on top. Serve hot.

Add chicken pieces while cooking for a meatier pilaf.
