Sweet Pineapple Prawn Curry
Juicy prawns with lemongrass in a sweet curry infused with the nectarous tang of pineapples.

Ingredients
- 250g prawns
- 1 cup pineapple pieces
- ½ cup coconut milk
- 1 packet Knorr Chinese Sweet & Sour Recipe Mix
- 1 big onion, chopped
- 2 garlic cloves
- Curry leaves
- 1 spring onion, chopped
- Curry Paste
- Ingredients for Curry Paste (Grind all ingredients into a paste)
- 5 dry chillies
- 5 ripe chillies
- 1 stem of lemongrass
- 50g red onions
- 5 dry sprats
- 1 teaspoon lemon rind
- ¼ teaspoon turmeric
METHOD
- Mix curry paste with coconut milk in a saucepan and bring to boil.
- Add pineapple pieces, chopped onions, curry leaves, garlic and Knorr Chinese Sweet & Sour Recipe Mix. Stir well.
- Drop in the prawns and let the curry simmer until cooked.
- Garnish with spring onions and serve hot.
