Boston Banoffee Pudding

An irresistible dessert which looks and tastes great! Layers of soft and spongy cakes caressed in flavoured cream with bananas and chocolate!

  • 125g Astra
  • 4 eggs, separated
  • 125g sugar
  • 125g flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon vanilla
  • 1 ripe banana
  • 150g cooking chocolate
  • 1 cup whipping cream
  • 1 cup icing sugar
  • 2 tablespoons lime juice
  • For sugar syrup
  • 1/2 teacup water
  • 1/2 teacup brandy
  • 3 tablespoons sugar


  • Add the Astra, sugar, egg yolks, vanilla and beat well till fluffy.
  • Then, mix in the flour with baking powder well. Fold the flour mix to the Astra mixture carefully.
  • Whisk the egg whites till soft peaks form and fold this into the above batter.
  • Coat bake ware with Astra and bake in a moderate oven at 1800 C till golden brown. Let it cool.
  • Now, on a serving plate or individual ramekin place a slice of the sponge cake and brush the sugar syrup over it.
  • Whip the icing sugar and the whipping cream till creamy. Apply a layer of cream on the cake and placed the sliced banana on it.
  • Then, arrange another layer of the sponge cake and brush the sugar syrup over it. Apply the cream and add the banana slices. Grate the cooking chocolate over it and serve chilled.
  • Chef’s Tip:

    Mix the lime juice with the banana to avoid discolouration.
