Louisiana Rice

Louisiana Rice

An extra special rice dish with a delicious combination of flavours and textures and is a meal in itself.

  • 500g cooked rice
  • 2 Knorr Chicken cubes
  • 1 onion, chopped
  • 1 eggplant, diced
  • 200g bacon, diced
  • 200g chicken liver, chopped
  • 1 celery stick, chopped
  • 1 green bell pepper, diced
  • 1 teaspoon crushed pepper
  • 200ml water
  • Bay leaf
  • 50g Astra
  • Handful of chopped parsley


  • Melt Astra in a pan. Add onion and garlic and sauté till fragrant.
  • Add the bacon and fry for a minute. Add the liver and cook for a further 2 minutes. Mix in the bay leaf, celery, pepper and the Knorr Chicken cubes.
  • Add the egg plant and water and simmer till the liver is cooked through.
  • Mix in the bell pepper and continue to cook.
  • Finally combine the rice and mix well. Serve hot with a sprinkling of parsley on top.
  • Chef’s Tip:

    As with buriyani, you can cook the rice with the vegetables and liver to increase flavour.
