Louisiana Rice
An extra special rice dish with a delicious combination of flavours and textures and is a meal in itself.

Ingredients
- 500g cooked rice
- 2 Knorr Chicken cubes
- 1 onion, chopped
- 1 eggplant, diced
- 200g bacon, diced
- 200g chicken liver, chopped
- 1 celery stick, chopped
- 1 green bell pepper, diced
- 1 teaspoon crushed pepper
- 200ml water
- Bay leaf
- 50g Astra
- Handful of chopped parsley
METHOD
- Melt Astra in a pan. Add onion and garlic and sauté till fragrant.
- Add the bacon and fry for a minute. Add the liver and cook for a further 2 minutes. Mix in the bay leaf, celery, pepper and the Knorr Chicken cubes.
- Add the egg plant and water and simmer till the liver is cooked through.
- Mix in the bell pepper and continue to cook.
- Finally combine the rice and mix well. Serve hot with a sprinkling of parsley on top.

Chef’s Tip:
As with buriyani, you can cook the rice with the vegetables and liver to increase flavour.
