Tempered Pineapple Gojju
Juicy pineapples tempered with a potent mix of sweet, savoury and sour spices loved in Karnataka, India.

Ingredients
- 4-5 cups pineapple, diced
- 20g raisins
- 1 packet Knorr Maldive Fish Powder Mix
- ½ cup sugar
- 2 tablespoons ginger, chopped
- 1 tablespoon lime juice
- 3-4 cups water
- Salt to taste

For tempering:
- 2 tablespoons sesame oil
- 2-3 dried red chillies
- ½ teaspoon cumin
- ½ teaspoon coriander seeds
- ½ teaspoon mustard seeds
- 6-7 peppercorns
- 1 cinnamon stick
- 3 - 4 cloves
- 1 tablespoon chilli powder
METHOD
- Add all the ingredients into a pan, except for the lime juice and tempering ingredients. Cook on a low heat till the pineapples soften and the liquid thickens.
- Turn off flame and mix in the lime juice.
- In a separate pan, heat sesame oil and pour in mustard seeds. Then add all the tempering ingredients and sauté till fragrant.
- Pour in the pineapple mixture and stir well to combine with tempering ingredients. Temper for a few minutes and turn off heat.
