Tempered Pineapple Gojju

Juicy pineapples tempered with a potent mix of sweet, savoury and sour spices loved in Karnataka, India.

Ingredients

  • 4-5 cups pineapple, diced
  • 20g raisins
  • 1 packet Knorr Maldive Fish Powder Mix
  • ½ cup sugar
  • 2 tablespoons ginger, chopped
  • 1 tablespoon lime juice
  • 3-4 cups water
  • Salt to taste
  • For tempering:

  • 2 tablespoons sesame oil
  • 2-3 dried red chillies
  • ½ teaspoon cumin
  • ½ teaspoon coriander seeds
  • ½ teaspoon mustard seeds
  • 6-7 peppercorns
  • 1 cinnamon stick
  • 3 - 4 cloves
  • 1 tablespoon chilli powder

METHOD

  • Add all the ingredients into a pan, except for the lime juice and tempering ingredients. Cook on a low heat till the pineapples soften and the liquid thickens.
  • Turn off flame and mix in the lime juice.
  • In a separate pan, heat sesame oil and pour in mustard seeds. Then add all the tempering ingredients and sauté till fragrant.
  • Pour in the pineapple mixture and stir well to combine with tempering ingredients. Temper for a few minutes and turn off heat.
