Sweet Pineapple Prawn Curry

Juicy prawns with lemongrass in a sweet curry infused with the nectarous tang of pineapples.

  • 250g prawns
  • 1 cup pineapple pieces
  • ½ cup coconut milk
  • 1 packet Knorr Chinese Sweet & Sour Recipe Mix
  • 1 big onion, chopped
  • 2 garlic cloves
  • Curry leaves
  • 1 spring onion, chopped
  • Curry Paste
  • Ingredients for Curry Paste (Grind all ingredients into a paste)
  • 5 dry chillies
  • 5 ripe chillies
  • 1 stem of lemongrass
  • 50g red onions
  • 5 dry sprats
  • 1 teaspoon lemon rind
  • ¼ teaspoon turmeric


  • Mix curry paste with coconut milk in a saucepan and bring to boil.
  • Add pineapple pieces, chopped onions, curry leaves, garlic and Knorr Chinese Sweet & Sour Recipe Mix. Stir well.
  • Drop in the prawns and let the curry simmer until cooked.
  • Garnish with spring onions and serve hot.
