A holiday phenomenon experienced by most moms, is the constant rumblings of your kids tummy! Having to cater to their seemingly never ending hunger pangs can be quite a task. We have some fun and easy to prepare snack ideas that will get you through the holidays without much hassle. Here they are!
Easy Brownies – all you need is 1 ¼ cup nutella, 2 eggs and ½ cup flour! Preheat oven to 350o F. Mix all the ingredients in a bowl until batter is smooth and pour into a baking pan. Bake for 15 minutes until toothpick inserted comes out clean.
Mug Mac & cheese- 1/3 cup pasta, ½ cup water, ¼ cup milk, and ½ cup shredded cheddar cheese is what you need. First combine the pasta and water in a large mug or bowl and microwave on high for two minutes and stir. Repeat this for at least 2 to 4 more minutes, stirring at each 2-minute interval. Remove it from the microwave and stir in the milk and cheese. Microwave for another minute and eat up!
Lotus Root wafers (Nelum ala) - super healthy and delicious! Cut into thin slices toss in salt and corn flour and deep fry until crisp. For added flavour you can use chili flakes, oregano etc.
Pancakes – batter can be pre-made and stored in the fridge for multiple uses. All you need is flour, eggs, water and a pinch of salt. Milk and sugar can be added for flavour. Serve as is or with honey or some yummy chicken curry!
Omelettes- Be creative and add vegetables, cooked chicken, sausages, cheese, bacon etc. and enhance the taste and value of this versatile snack.
Chapati/Naan pizzas - Spread some tomato sauce on the chapati, sprinkle the cheese on top and microwave for 2 - 2:30 minutes and voila! You can add another layer for more yumminess.
Homemade ice cream – All you need is frozen fruit (mango, banana, raspberry, strawberry etc), ½ cup sugar, 2/3 cup heavy cream and 1 tsp of vanilla! Combine the fruit, sugar, cream and vanilla in a blender. (Process mixture until it resembles ice cream). Eat as is or freeze for firmer texture.
